6 lg. fresh ripe peaches, peeled, pitted and sliced
juice from 1 fresh lemon
1/3 C. water
3 T. granulated sugar
2 C. fresh strawberries
1/3 C. granulated sugar
1 tsp. vanilla
1 C. heavy whipping cream, whipped stiff

Prepare the peaches as indicated, then toss with the lemon juice. Boil the
water and first measure of sugar until the sugar dissolves. Pour the hot
simple syrup over the sliced peaches. Cover and let the peaches cool in the
syrup. Reserving 1 large whole strawberry for garnish, puree the remaining
berries in your food processor, adding the remaining sugar and vanilla.
Slowly fold the berry puree into the whipped cream, cover and chill several
hours before serving. Arrange the drained peaches in a chilled serving dish.
Spoon the strawberry cream over the peaches and serve immediately,
garnished with the reserved whole berry. Mint leaves will look good, if
desired. Makes 6 servings.
